Pie for Dinner


I came across this recipe on Vegetarian Times and the title alone captured my attention!

The article spoke of quiche and how this tasty dish can be prepared 24-48 hours prior to serving. This too caught my attention because many times I like to cook on Sunday and we have the left overs on Monday or Tuesday. It’s a real treat to get home and know all you have to do is warm something up and you have a delicious meal.

Vegetarian Times Mushroom and Spinach Quiche recipe combined two ingredients I already loved. A feature that you will find on the recipe link is the nutritional content of the quiche. This comes in handy if you are following a nutrition plan. For busy momma's like me, I used the ready made pie crust from Pillsbury. Saves time during a busy evening or active weekend.
